It's finally August. No - I am not wishing time away, but this July was one of the worst ones I have had to live through! The heat and the humidity got to me really bad this year - and my insane schedule is something I hope I don't have to do again.
We've had five deaths in the past 2 weeks; 3 waked out at the same funeral home - AT THE SAME TIME! So my head has also been located up my a.z.z. I sent out my July 31 newsletter and dated it 08-31-2010. Oh well - I'm slowly returning to a more normal life.
Cooking has not been easy. Not only has it been the heat and humidity, but the schedule. Up at 3 AM - off to the babies house for 5 AM - watch them sleep (mom's a bus aide), wake them, bathe them, feed them, take the little guy to summer school, bring Princess back home, clean up the house for their mom, play with her, then pick him up from school - their mom gets home by 1 and I can go home to cook and do everything I need to get done. Two more days of this - then I don't have to be there by 5 in the morning again until September - and both are in school so I get to come home after I take them to school. Then I can cook and bake and have a more normal schedule - and even if I have to pick them up from school - it's much better than what I have been through this summer. Mom hasn't been well - and I am still trying to help our friend who lost his wife back in April. I think I need more of me - I mean - several of me.
One thing I am glad that I have done was to over cook and freeze foods for future meals. It has really helped me out during this past month. I don't have much left to rely on - so nothing has gone to waste. Besides - I don't believe in freezing foods for too long. I feel it takes away from the flavor.
Today was easy cooking! Well - maybe not THAT easy. But I had cooked chicken quarters in the freezer which I popped in the oven to heat through. While that was heating, I made some cheater gravy using bouillon cubes -
3 cups water
3 chicken bouillon cubes
fresh ground black pepper
bring to boil, and add my roux of flour/water
add a drop or two of browning sauce
Meanwhile, my potatoes that I diced were boiling for mashed potatoes - and I heated green peas with butter, Kosher salt and pepper. All was done in 30 minutes - so I can't complain.
It really wasn't the day for the oven - but after I took the chicken out - I closed the door to let it cool down. The kitchen got hot - but it was worth it today. Of course I feel guilty - being Sunday - we always have a nice meal that takes time to prepare for a special Sunday dinner, but I had to cheat for today.
Tomorrow is another day - nothing to rely on in the freezer - time for the thinking cap!
